Walnut Turtles
2 cups walnut halves and large pieces
36 packaged caramels unwrapped, or homemade carmel
3 tablespoons butter or margarine
1/2 tsp. pure vanilla extract
2/3 c. semisweet or milk chocolate pieces
1 1/2 tsp. shortening
Cover baking sheets with waxed paper and arrange walnut pieces in 28-30 clusters, spaced at least 1 inch apart.
Place caramels in top of dbl boiler with butter. Set over boiling water. Heat until caramels are completely melted, stirring occasionally.
Remove from heat, add vanilla extract, stir until butter and vanilla are thoroughly mixed with caramel.
Drop by teaspoonfuls onto center of each walnut cluster, making sure that caramel touches all the walnut pieces to hold them together. Allow them to cool.
Melt chocolate with shortening over hot, but not boiling water. Spread over caramel and nut candies and allow to set before removing from waxed paper. Makes 28-30 turtles
Caramels (Double Batch)- Good for making Turtles
2 cups of sugar
1 ½ cups dark corn syrup
1 cup butter
2 cups. Light cream
1 cup finely chopped nuts
1 tsp. vanilla
Butter sides of heavy sauce pan, then add sugar, corn syrup, butter and half of cream. Bring to boiling, stirring constantly. Slowly stir in remaining cream. Cook over low heat to med. ball stage (242 degrees) stirring almost constantly towards the end. Remove from heat. Add nuts and vanilla and put into buttered containers or drop onto nuts for turtles.
If making for turtles, only cook to 224-228 degrees. Then add whole nuts and stir. Drop by spoonfuls to buttered wax paper or buttered pan. Then paint tops with melted chocolate.
Oh Henry Candy Bars
1 cup sugar
1 cup light Karo
1 cup peanut butter
1 cup salted nuts
3 cups Rice Krispies
6 oz. chocolate chips (semi-sweet)
6 oz. butterscotch chips
Bring sugar and karo to boil. Add peanut butter and nuts. Add Rice Krispies. Put inot buttered 9x13 pan. Mel chips together then spread on top Rice Krispies mixture. Allow to cool and cut into squares.
Peanut Butter Cups
4 cups powdered sugar
2 ½ cubes margarine
1 pkg graham crackers
1 cup peanut butter
Mix ingredients together. It will probably be necessary to use your hands. Press in 9x13 pan. Melt 12 oz. pkg of chocolate chips and spread over peanut butter mixture cool and cut into squares.
Sometimes, Myrt rolled the peanut butter mixture into balls and then dropped melted chocolate into a candy paper, placed the peanut butter ball, then dropped more chocolate on top.
