1 ¼ cup flour
½ cup shortening
1 Tbsp soft butter
½ cup sugar
1 egg
1 ½ cups flaked coconut
¼ cup sugar
1 cup crushed pineapple (drain well)
Combine flour, ¼ cup sugar, and shortening in bowl. Cut in shortening until mixture looks like coarse corn meal. Pat evenly in bottom of ungreased 8 inch square pan. Bake for 15 min. Remove from oven top with pineapple. Set aside.
Combine butter and remaining sugar and egg. Beat well add coconut. Blend. Spread over pineapple. Bake 25 to 30 minutes.
